This salt is then smoked by Les As du Fumoir in Bury in the Eastern Townships using wood from barrels that were first used to produce whisky. Barrels that were first recovered by Virgin Mady , a local artisanal company, which uses them to age part of its excellent maple syrup in barrels. This is therefore a great example of the circular economy.
Explosion Boréale is an innovative seasoning that combines Saint-Laurent salt, gorria pepper from the Jardin des chefs in Charlevoix and dune pepper harvested in the boreal regions.
