After travelling to Asia to study tea production techniques, Julien Drouin-Bouffard developed a unique expertise in Quebec to transform willowherb, a common plant in our northern territory, into tea.
The tea he produces differs from the herbal teas we are used to by the processing techniques used. While for herbal teas, the leaves or flowers of the plants are simply dried at low temperatures, to produce willowherb tea, its leaves, once harvested, are withered, rolled, oxidized, and oven-dried.
The result of this work, in the case of willowherb green tea, is a fresh, delicate and slightly buttery tea with toasted notes in the finish.
