An exceptional product, birch syrup is produced like maple syrup, but requires much more raw material. While the latter requires 40 liters of maple sap to produce 1 liter of syrup, it takes nearly 160 liters of birch sap to make 1 liter of birch syrup.
The result is an unrivaled product with complex notes of molasses, anise and coffee whose residual acidity is reminiscent of balsamic vinegar.
Although it can be used in sweet cooking, it is in savory dishes, particularly with fish, meat and grilled vegetables, that birch syrup reveals its full potential.
