Dune pepper , also called crisp pepper, is not, botanically speaking, a true pepper. It gives off a rich and extremely complex scent, with a floral, almost musky side. It also has a resinous and fir side which is reminiscent of the forest where it comes from. Excellent in stews, marinades and homemade chutneys, it is also a good complement to dishes based on braised or simmered wild meat.
Coming from the boreal forest, this dune pepper comes from the north of the Lac Saint-Jean region.
