You absolutely have to try these Kalamata olives . Dark purple and very fleshy, these olives are picked by hand in the beautiful region of Kalamata in Greece.
After picking, the olives macerate for three months in a brine whose recipe is a family secret passed down from generation to generation.
Interestingly, the level of polyphenols remains generously high after processing. This is what gives them a slightly bitter taste.
