This fir honey is the result of Jérémie Postel's patient work. This artisan forest harvester was inspired by an ancestral Amerindian recipe, which he adapted.
To produce his fir honey, Jérémie travels, in early June, through the mixed forests of the Sutton region in Estrie to harvest young balsam fir shoots, full of sap. He then macerates them for several months in the honey of a friend, an artisan beekeeper from the region. The result: a product that will transport you taste-wise deep into the forest.
