The Domaine Bergeville vineyard, located in Canton-de-Hatley in Estrie, produces two ranges of organic sparkling wine, each including a white, a rosé and a red. Yes, red bubbles!

The first range is available in several SAQ branches and grocery stores in Quebec. The second with a lower sugar level is normally reserved for restaurants where these wines go wonderfully with meals.

For the holidays this year, Ève and Marc, owners of the vineyard, decided to release a few cases of red from the gourmet range for certain hand-picked grocery stores. In Estrie, the Comptoir gourmand du Centro (now Gourmande boutique) was selected. We are therefore pleased to offer you, for a limited time, the famous exceptional organic red sparkling wine.

Exceptional organic sparkling red wine

Description of the wine

“When opened, a generous foam fills the glass. When this fades, the wine shows a light ruby ​​color with ocher tones.

The moderately aromatic nose is precise, fragrant and fruity. Red and black fruits dominate with raspberry, blackberry, blackcurrant and cranberry. In the background we can see some red floral notes reminiscent of hibiscus. We also perceive a slight evolution giving this sparkling wine well-integrated earthy notes.

On the palate, the wine is at once fresh, vinous and lively. The floral-earthy note of hibiscus dominates, accompanied by an acidity reminiscent of cranberry. There is a nice balance between the great freshness coming from the varietal character of the frontenac noir, brilliantly balanced with a creamy bubble and finished with a touch of bitterness on the finish. This prolongs the length of the wine in its aroma and allows, with the exception of 2016, to accompany several dishes at the table. »

Food and wine pairings

“As an aperitif, it will go wonderfully with a platter of charcuterie and some marinated beets. For vegetarians, its freshness and earthy notes would allow it to perfectly support a ratatouille (preferably organic). For those who unpretentiously admire the festive character of exceptional bubbles, its unique fresh-effervescent and precise character will accompany the dishes that generally garnish our tables at Christmas. Finally, when it comes to cheese, it can undoubtedly accompany a light parsley (for example the Rassembleu from the Fromagerie de la Table Ronde). And more anecdotally, the exception is strangely all the rage with the very Quebec ketchup chips (from Lays)! »
